Merry Christmas! *Casino Style*
The task of planning our company Christmas party was passed down to myself and another co-worker this year. Admist all of the other things going on, we somehow managed to pull it off. Here are a few shots of the festivities.
Pancetta wrapped shrimp with basil and tomato bow ties!
Delicious, easy, affordable and tastes amazing with a cold glass of pinot grigio :) based off a Rachael Ray recipe..
Ingredients:
1lb of large shrimp (peeled and deveined)
12 oz of bow tie pasta
2 pints of grape tomatoes
Pancetta - enough to wrap all shrimp (I used 2 packages)
1 Chopped Onion
3 minced cloves of Garlic
1/4 cup White wine
Fresh basil
Fresh parsley
Olive oil
Parm Cheese
Cook pasta al dente.
Wrap each shrimp in a strip of pancetta. Sear the wrapped shrimp in a warm pan with olive oil until pancetta is golden brown and the shrimp look pink on all sides. Season with pepper as you cook.. ( skip the salt… The pancetta is very salty )
Put shrimp on the side and cover to keep warm. Add onion and garlic to pan and soften. Add wine and tomatoes and cover and cook for a few minutes… Until the tomatoes start to pop. Mash with a potato masher and season with S and P.
Combine pasta and sauce and add herbs. Top with a few shrimps and some parm cheese. YUM!
2 weeks ago, our neighbor’s sweet pit bull passed away. He left this world with 4 people that loved him dearly all around him. He showed me that with patience, love, and discipline, any breed and any dog can become man’s best friend. He changed a lot of people’s perceptions of his breed… and I’m so happy to have spent many weekends with him over the course of the last few months. Here are a few photos of him. Rest in Peace, Apollo! We miss you very much.
Seasons greetings! Guess I’ve always been a fan of the most wonderful time of the year… Now, if I could only get some snow!
Roasting pumpkin seeds, sitting by the fire and just finished a few masterpieces. I have to say, I do love this time of year.
